Armadillo Eggs

Total: 55-60 min
Ingredients:
12 large jalapeño peppers
1 lb. of pork sausage
1 cup of parmesan
8 oz. cream cheese softened
Directions
Cut peppers in half and take seeds out for a milder flavor, or leave in for a spicy flavor.
Cook sausage until browned, drain excess oil. Use your hands to mix the sausage, cream cheese and parmesan. Stuff mixture into peppers.
Bake at 420 degrees for about 20-30 minutes.

Bunch worked at the Savannah River Site for over 21 years. Following his time there, he came across a recipe that he has considered “the best appetizer that you could ever have.” Bunch has shared his unique recipe for Armadillo Eggs with friends and family members for years and says that everybody who has tried it loves it as well. One of the reasons that this recipe is so special to Bunch is that he really enjoys the process of making it and sharing it with others.
