Crazy Cake and Frosting

Ingredients:
CAKE:
3 cups flour and 2 cups sugar
6 tbsp. cocoa powder and 2 tsp. (Mexican) vanilla
2 cups cold water
²⁄³ cup cooking oil and 2 tbsp. vinegar
PLAIN CHOCOLATE FROSTING:
¹⁄³ cup soft butter and 3 cups sifted powdered sugar
¼ cup sifted cocoa powder and 1½ tsp. vanilla
3 tbsp. milk
Directions:
Sift together in mixing bowl: flour, sugar, cocoa powder, baking soda and salt. Make three “wells.” In dry mixture put the cooking oil in one well, vinegar in one well, and vanilla in one well. Using mixer’s lowest speed, add 2 cups cold water very slowly, to avoid spattering. Do not beat. Mix only until well mixed. Pour into an un-greased 9”x 13” baking pan. Bake at 350 degrees for 30 min.
DIRECTIONS FOR FROSTING
Mix all together with beater on low, beginning with butter, then powdered sugar in small amounts, alternating with the liquids. Keep mixing until all ingredients have been added, adding enough milk to reach the desired consistency. Garnish with fresh fruit or berries if desired.
